We all know that once there is a fad or trendy diet out there, companies begin to try and make food to cater to that. Keto is not any different and it seems like every time I turn around there are more products claiming low net carb counts. It can be both a good and a bad thing. Good in that you have more options to have a quick meal or to satisfy a craving. Bad in that some of this stuff is still just over processed junk. This week I gave a few of those products a try to see if they could help satisfy some of the random cravings that I was having.
This week I lost .4 pounds for a total of about 11 pounds so far. I was actually down more than that in the middle of the week, but I know hormones can change our weight in the blink of an eye so I’m not sweating over it. 11 pounds in three weeks is pretty good and maybe even a little too much. Either way, this week I was in the middle of an autoimmune flare up which meant I was super tired, slept in most days, and didn’t get good sleep at all. Currently I know that I am overmedicated which can cause it’s own host of side effects and am waiting for the doctor to make changes to all of that. It should be done next week so no worries. I will say that when we did blood work at the end of the week and I got my numbers back, they are looking much better compared to the two previous tests. There’s been a decline in my blood sugar as well as a few other levels that are indicative of NAFLD. Because of all of that flare up though, convenience foods were a little bit of a crutch this week. We still made every meal this week. I failed at taking photos of them though, with the exception of a very hastily snapped photo of the citrus carnitas that I made. - Deconstructed Gyros
- Beef Stew Provencal
- Moo Shu Pork
- Citrus Carnitas
- Keto Chicken Parmesan from Delish
- Chicken Nan King
- West African Chicken Stew
This week kicked ass for meals. Out of all of the ones above, the Beef Stew Provencal is the only one I wouldn’t make again and that’s because we don’t do vinegar that much and the husband wasn’t a fan of the orange juice used in the stew. Honestly it wasn’t even that bad, just not what everyone wants. The Citrus Carnitas was my absolute favorite though. I paired it with veggies and some mission carb balance tortillas and I was absolutely in heaven. I had to make the typical adjustments to a few that required things like sweet potatoes to make sure I kept it as low carb as possible. Altogether though, this week was pretty great for dinners.
On to the convenience foods. While looking for recipes I came across recommendations for various items. While we were at the grocery store I picked up some Fat Snax, a Quest Frozen Pizza, and some Gimme Organic Roasted Seaweed Snacks. Earlier during the week we had also picked up some Parm Crisps from Whole Foods that went in the trash after chewing one and spitting it out. I even made the husband test them to make sure I wasn’t crazy. Neither of us would be eating those. There is also some low carb ice cream that I picked up, that I’m too lazy to go take a photo of right now. This particular brand was Killer Creamery and it is a cinnamon bun flavored ice cream. Okay, so now you know some of the things I purchased so let’s jump in. I was not prepared to like the roasted seaweed snacks, but I was desperate for something with even a slight crunch because this girl hates pork rinds so I will not be replacing chips with those. My least favorite part of sushi was always assumed to be the nori, but turns out I think I just really hate anything that puts cream cheese in sushi. These things were weird at first but got so much better as I was eating them and they actually really did get rid of the craving I had for potato chips. That’s a pretty good deal in my opinion and I think they only have 1 carb, so that’s awesome as well. The Fat Snax were a little bit of a let down. I was sincerely hoping for something that had more of the chocolate chip cookie flavor that I wanted, but it falls short. That doesn’t mean it’s bad though, it just didn’t really fix that craving for me. Not to mention the package says 2 net carbs and my app tracks it as something like 5 carbs. So I’m not sure which one is right here. I haven’t figured out yet if you really should subtract sugar alcohols or not. The Killer Creamery Ice Cream was not too bad, but it needs to sit for a bit so it can soften/ melt because otherwise it’s kind of got a weird almost chalky texture? Or maybe like sort of dry clay? I’m not really sure. It’s a bit weird. My little one ate half of my serving of ice cream though so I must say that it’s definitely not that bad. Finally, the Quest Pizza. The photo above is of the Supreme pizza which I actually have yet to try. I tried the pepperoni pizza and it absolutely was what I was craving. Let’s be clear. I love borderline crappy frozen pizza. Tony’s is absolutely one of my favorites and I would say that this is just slightly below it, but still good enough to make me a super happy camper. It’s even low enough carbs that you could probably eat the whole pizza in one sitting and still not feel guilty depending on how the rest of your day looks food wise. Worth the money in my opinion.
As with any convenience food, I wouldn’t recommend relying on them. They helped me deal with the cravings that randomly popped up during the week and kept me from stealing doritos from my little one or indulging in pizza and knocking myself out of ketosis. Sticking to whole food as much as possible is far better for me than adding in these foods no matter what their nutrients look like. I know that there’s lots of arguments about how a calorie is a calorie, but I respond best to less processed foods and I prefer to know as much about my food as possible. I have one more week of this “experiment” left, but will actually be turning it into five since I will be going on vacation then. I guess then I’ll probably write about what happens when you have a cheat week. Will my progress disappear? Will I add back on five pounds of water weight immediately? Or will I start feeling crappy after eating carbs again? Stay tuned to find out. All I know is I am super looking forward to a few food items when I go back to visit Oklahoma.
